Healthy Breakfast Omelet 




Breakfast is the most important meal of the day and should never be skipped. Even if you don’t have time to cook breakfast, try to grab a piece of fruit or make a breakfast smoothie at the least. I like making egg white omelets because the egg whites are full of protein and the veggies have lots of nutrients and fiber.

I usually prepare my veggies and omelet separate then mix everything together. Below is the simple recipe I follow:


Note: This recipe will make about 1 omelet

  • ½ cup of egg whites (you can use a full egg and separate the yolk or purchase just the egg whites)
  • 1 handful of baby spinach
  • ¼ teaspoon of McCormick California style garlic pepper with red bell & black pepper (my favorite seasoning)
  • 1 cup of mixed veggies- mushrooms, colorful bell peppers (or I use whatever I have in the fridge)

Note:  Use whatever vegetables you like, sometimes I will use steamed asparagus or broccoli.


Instructions:
1. If you are using whole eggs, remove the yolk and mix just the egg whites together in a bowl, then add garlic pepper to taste.

2. Place all your veggies in a small skillet coated with olive oil over medium heat, allow them to sauté.

3. In another skillet coated with olive oil over medium heat, pour the egg white mixture and cook for about 2 to 3 minutes.

4. Flip with spatula and cook for another 2 minutes (at this point you can add your sautéed  veggies to the egg whites)

5. Reduce the heat, sprinkle a little cheese and then fold the omelet in half.

6. Place omelet on a plate and enjoy!


Note:  You can also mix the egg whites in bowl together along with the veggies and cook together. I do this sometimes too. I also like to have a piece of wheat toast on the side or grilled chicken if I’m really hungry.

Cardio Funk


 Cardio Funk


Today‘s workout was a cardio dance class a friend of mine teaches “Cardio Funkat the YMCA. I attended this class one time a couple years back and at the time I was not as active as I am now so all I remember is thinking the instructor was “INSANE.” LOL…. she had such high energy and I could barely keep up lol…. so when I got the invitation to attend the class today, I was excited and nervous at the same time because this class is nonstop intense dancing and moving for 1 hour!

I did better today than I did the first time. I was actually able to keep up (somewhat) lol…. I didn’t have to take as many breaks in between and I had a blast!

The class was fun and I really liked the hip hop dancing aspect. I will definitely attend again!

Healthy Eating Shopping


Eating the right foods is probably the most important portion of getting those amazing abs you’ve always dreamed of…. be sure to incorporate fruits and veggies into your diet for maximum results……

Today I went to Trader Joe's to purchase some of my favorite fruits and veggies to get my
 “21 day sexy abs challenge” 
off to a great start.




During this challenge I’ll be eating lots of vegetable, fruit and drinking plenty of water daily. I try to do all of these things already, but I will be even more conscious now.   

***My dinner this evening****

 I used grapeseed oil to sauté my veggies (mushrooms, onions and asparagus) I prepared  tilapia and brown rice along with.

21 Day Sexy Abs Challenge (Day 1)


Sexy Abs Cardio Sculpt 


So, if you have not already heard....Kelly Rowland and Hollywood trainer Jeanette Jenkins have a new fitness DVD out titled "Sexy abs cardio sculpt" When I first saw the release I was intrigued because Kelly Rowland looks amazing and I really like what she's been doing in the fitness world.

I recently completed a 30 day fitness challenge to take my health & wellness journey more seriously by staying on track with eating healthy and exercising on a consistent basis. I'm happy to say the challenge was a success and I got some pretty good results... so good, I wanted to start a new challenge to keep the momentum going. 



For this challenge I'll be:
  • Focusing mainly on getting those sexy abs like Kelly Rowland ( or somewhere close ha ha :))
  • Sharing foods and recipes that will help get a flatter tummy
  • Providing some inspiration and encouragement
  • Recommending and reviewing any products I use to help assist with my abs 
  • Sharing before and after photos of my progress after the 21 days are up

*To kick off the challenge- I went to the gym today to do a full body workout (including abs) *

30 Day Fitness Challenge Day 30 (discipline)

You Can't Buy Discipline 


There are some things in life money just can buy and discipline is one of them!.....sure you can go out and buy fancy gym equipment for your home or even take the big leap to upgrade to that 'ultimate, premium, triple, plus, plus' membership at your local gym thinking it's going to 'magically' make you wanna workout.

*Neither of these will work if you don't have the discipline and commitment to accompany them!*

Trust me, I know first hand... before I got serious about working out consistently, I contemplated getting a fancy treadmill, and a whole bunch of other 'gym equipment' thinking I would get serious once I purchased them (bad idea) I even got a gym membership that sat for months without me ever using it. lol (don't act like y'all don't know what I'm talking about all my New Year's resolution people who get a membership at the beginning of the year and never go back after signing up lol :)

I wanted to bring a little encouragement by letting you know it's never too late to get serious about living a healthier, active lifestyle. There's always something you can do even if you have to start small... 

Making up your mind and committing to your health and wellness goals no matter what it takes is more than half the battle.
